Thai Chicken Lettuce Cups

Ingredients
  • 1 Bag Tanimura & Antle Artisan® Sweet Gem
  • 2 Cups cooked rotisserie chicken, shredded
  • 1 Red bell pepper, thinly sliced
  • 1 English cucumber, thinly sliced
  • 1 Cup purple cabbage, shredded
  • Optional Toppings: Sliced green onion, chopped peanuts, sesame seeds

 

For the Sauce:

  • 1/2 Cup smooth peanut butter
  • 2 Tbsp. soy sauce
  • 2 Tbsp. toasted sesame oil
  • 2 Tbsp. rice vinegar
  • 3 Tbsp. honey
  • 1 Tbsp. water
  • 1-Inch wide piece of ginger, grated
  • 1 Small clove of garlic, grated
Directions
  1. Prep the Artisan Sweet Gem. Cut the root stem off and separate the leaves.  Rinse with warm water and pat dry.
  2. Measure sauce ingredients into a bowl and whisk until smooth.
  3. Toss shredded chicken with 1/2 cup of the peanut sauce until thoroughly coated. Save extra sauce for drizzling or dipping.
  4. Assemble the lettuce cups. Divide the peanut chicken between the lettuce leaves along with the bell pepper, cucumber and cabbage. Top with green onion, peanuts and sesame seeds as desired.
  5. Serve & Enjoy!
