Rainbow Salad

Servings: 4-6 Products Used: Tanimura & Antle Artisan Lettuce
Ingredients
  • 2 Heads Tanimura & Antle Artisan® Lettuce, chopped
  • ½ cup Tanimura & Antle Artisan® Sweet Italian Red Onion, diced 
  • ½ cup red cherry tomatoes, sliced in half
  • 1 carrot, thinly sliced
  • ½ cup yellow cherry tomatoes, sliced in half
  • 1 avocado, chopped
  • 1 cup cucumber, thinly sliced
  • 1 cup purple cabbage, shredded
  • ¼ Slivered almonds
  • Handful of fresh cilantro, chopped
For the Dressing
  • Zest of 1 lemon
  •  3 tbsp. lemon juice
  •  1 1⁄2 tsp. Dijon mustard
  •  1 1/2 tsp. honey
  •  Kosher salt and freshly ground black pepper, to taste
  •  3 tbsp. olive oil
Directions
  1. Add chopped Artisan Lettuce to large salad bowl
  2. Add all other salad ingredients on top of the Artisan Lettuce
  3. To prepare the dressing, whisk lemon zest and juice, mustard, honey, salt, and pepper in a mixing bowl or mason jar until combined
  4. While whisking, slowly drizzle in olive oil until vinaigrette is emulsified
  5. Toss dressing into salad to taste, serve & enjoy!
