Store escarole in the crisper or produce drawer of the refrigerator, up to one week. Wash right before eating. Store away from ethylene-producing fruits to avoid discoloration, spotting or decay.
Escarole can be eaten raw or cooked. Sauté with olive oil and garlic and sprinkle with grated Parmesan cheese; serve with grilled fish or Italian sausages; Make a classic Italian escarole soup with chicken broth, meatballs and pasta. The slightly bitter greens work well in a fruit and toasted nut salad.
