Iceberg Asian Chicken Wraps

Products Used: Tanimura & Antle Iceberg Lettuce

Ingredients
    • 1 Large Head Tanimura & Antle Iceberg lettuce, cored, large outer leaves removed (8-10 lettuce “cups” at least), center portion sliced very thinly into strips

    • 2 Carrots, peeled, shredded

    • 6 Green onions, chopped

    • 3 Cups Roasted chicken, shredded

    • 1/3 Cup Cilantro, chopped

    • ¼ Cup Roasted peanuts

 

  • For the Dressing:
    • ¼ Cup Lime juice

    • ¼ Cup Sesame oil

    • 1 Red jalapeno, seeded, chopped

    • 2 Tbsp. Soy sauce

    • 2 tsp. Honey

    • 1 tsp. Fish sauce

    • 1 tsp. Grated ginger

    • Salt & Pepper

Directions
  1. Whisk dressing ingredients in a mixing bowl and set aside. 
  2. In a large bowl, combine thinly sliced iceberg, carrots, green onion, chicken and cilantro. 
  3. Toss with dressing and mix well. 
  4. Portion into reserved iceberg lettuce cups and garnish with peanuts. 
  5. Dip the iceberg wraps in the remaining dressing and enjoy!
