Ingredients
Green Goddess Dressing
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 (15 oz) can butter beans or cannellini beans, drained and rinsed
- ½ Artisan Red Onion, finely diced
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- ½ cup crumbled feta cheese
- ¼ cup chopped dill
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- Salt and freshly cracked black pepper, to taste
- Optional: pinch of dried oregano or crushed red pepper flakes
Directions
- Drain and rinse the beans thoroughly, then transfer them to a large mixing bowl.
- Add the diced Artisan Red Onion, halved cherry tomatoes, diced cucumber, crumbled feta, and chopped herbs to the bowl.
- In a small separate bowl, whisk together olive oil, vinegar, salt, pepper, and oregano (optional).
- Pour the dressing over the bean mixture.
- Toss gently until everything is evenly coated and combined.
- Taste and adjust seasoning as needed – add an extra splash of vinegar or squeeze of lemon for brightness.
- Chill the salad for at least 30 minutes before serving to allow the flavors to mend.
- Serve cold or at room temperature, topped with additional herbs or feta if desired.
