Artisan Sweet Red Onion Dense Bean Salad

Ingredients

Green Goddess Dressing

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (15 oz) can butter beans or cannellini beans, drained and rinsed
  • ½ Artisan Red Onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • ½ cup crumbled feta cheese
  • ¼ cup chopped dill
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and freshly cracked black pepper, to taste
  • Optional: pinch of dried oregano or crushed red pepper flakes
Directions
  1. Drain and rinse the beans thoroughly, then transfer them to a large mixing bowl. 
  2. Add the diced Artisan Red Onion, halved cherry tomatoes, diced cucumber, crumbled feta, and chopped herbs to the bowl. 
  3. In a small separate bowl, whisk together olive oil, vinegar, salt, pepper, and oregano (optional). 
  4. Pour the dressing over the bean mixture. 
  5. Toss gently until everything is evenly coated and combined. 
  6. Taste and adjust seasoning as needed – add an extra splash of vinegar or squeeze of lemon for brightness. 
  7. Chill the salad for at least 30 minutes before serving to allow the flavors to mend. 
  8. Serve cold or at room temperature, topped with additional herbs or feta if desired.
