Artisan Sweet Gem Salad with Bacon, Cherry Tomatoes & Herbed Croutons
Products Used: Tanimura & Antle Artisan Sweet Gem
Ingredients
- 4 Heads Tanimura & Antle Artisan® Sweet Gem Lettuce, cored and cut crosswise into 1″ strips
- 2 Tbsp. Unsalted butter, melted
- 1 tsp. Dried oregano
- 1 tsp. Dried thyme
- 4 Slices country white bread, cut into 1⁄2” cubes
- 1 Clove garlic, finely chopped
- 1⁄2 Thick-sliced bacon, cut into 1⁄2” cubes
- 1 Cup Grated parmesan cheese
- 1 Cup Mixed red and yellow grape tomatoes, halved
- 1⁄2 Cup Torn basil leaves
- 3 Tbsp. Fresh oregano leaves
- 5 Scallions, chopped
For the Dressing:
- ¾ Cup Mayonnaise
- 1⁄4 Cup Fresh lemon juice
- 1⁄4 Cup Extra-virgin olive oil
- Salt & Pepper, to taste
Directions
- Prep the Artisan Sweet Broccoli by washing and trimming the ends.
- Measure sauce ingredients into a bowl and whisk until smooth.
- In a large sauté pan with a lid, heat olive oil over medium high heat. When oil is hot, add the broccoli and season with salt and pepper. Cook broccoli uncovered until golden, about 5 minutes, turning once or twice. Add 2 Tbsp. water to the pan, cover and cook for 2-3 more minutes.
- Serve Artisan Sweet Broccoli warm and drizzled with spicy peanut sauce, topped with
green onion, red chili and sesame seeds. Squeeze extra lime as desired. - Enjoy!
