Artisan Sweet Gem Salad with Bacon, Cherry Tomatoes & Herbed Croutons

Products Used: Tanimura & Antle Artisan Sweet Gem

  • 4 Heads Tanimura & Antle Artisan® Sweet Gem Lettuce, cored and cut crosswise into 1″ strips
  • 2 Tbsp. Unsalted butter, melted
  • 1 tsp. Dried oregano
  • 1 tsp. Dried thyme
  • 4 Slices country white bread, cut into 12” cubes
  • 1 Clove garlic, finely chopped
  • 12 Thick-sliced bacon, cut into 12” cubes
  • 1 Cup Grated parmesan cheese
  • 1 Cup Mixed red and yellow grape tomatoes, halved
  • 12 Cup Torn basil leaves
  • 3 Tbsp. Fresh oregano leaves
  • 5 Scallions, chopped
For the Dressing: 
  • ¾ Cup Mayonnaise
  • 14 Cup Fresh lemon juice
  • 14 Cup Extra-virgin olive oil
  • Salt & Pepper, to taste
  1. Prep the Artisan Sweet Broccoli by washing and trimming the ends.
  2. Measure sauce ingredients into a bowl and whisk until smooth.
  3. In a large sauté pan with a lid, heat olive oil over medium high heat. When oil is hot, add the broccoli and season with salt and pepper. Cook broccoli uncovered until golden, about 5 minutes, turning once or twice. Add 2 Tbsp. water to the pan, cover and cook for 2-3 more minutes.
  4. Serve Artisan Sweet Broccoli warm and drizzled with spicy peanut sauce, topped with
    green onion, red chili and sesame seeds. Squeeze extra lime as desired.
