Artisan Lettuce Greek Salad & Artisan Broccoli Platter

Ingredients

Artisan Lettuce Greek Salad 

  • 4 cups Tanimura & Antle Artisan Lettuce, chopped
  • 1/2 cup Tanimura & Antle Artisan Red Onions, thinly sliced
  • 1/2 cup Tanimura & Antle Celery, chopped
  • 1/2 cup Kalamata olives, whole
  • 1/2 cup Feta cheese, crumbled
  • 2 Red tomatoes, wedged
  • 1/2 tsp Black pepper, coarse
  • 1/4 cup Greek salad dressing

Grilled Artisan Broccoli Platter

  • 2 bunches of Tanimura & Antle Artisan Broccoli, whole
  • 1 Tanimura & Antle Artisan Red Onion, sliced into rings
  • 2 tbsp Balsamic vinegar
  • 1/2 tsp Red pepper flakes
  • 4 Garlic cloves, thinly sliced
  • 1/2 tsp Black pepper, coarse
  • 2 tbsp Olive oil
  • Salt, to taste
Directions
  1. Preheat your grill to medium-high heat. If using a gas grill, preheat with the lid closed for about 10-15 minutes.

  2. Trim any tough ends from the Artisan Broccoli stalks. Rinse the broccoli under cold water and pat dry with paper towels.

  3. Slice the red onion into rings and thinly slice the garlic cloves.

  4. In a large bowl, toss the Artisan Broccoli, sliced red onions, and sliced garlic with olive oil and balsamic vinegar until evenly coated. Season with salt, pepper, and chili flakes to taste. Allow the vegetables to marinate for about 10-15 minutes to absorb the flavors.

  5. Place the marinated Artisan Broccoli directly on the grill. Arrange them in a single layer to ensure even cooking.

  6. Grill the vegetables for about 4-5 minutes per side, or until they are tender and slightly charred, flipping them halfway through the cooking time for even grilling. The broccoli should be crisp-tender, and the onions and garlic should be caramelized and fragrant.

  7. While the broccoli is grilling, assemble your salad. Chop the Artisan Lettuce, cut the tomatoes into wedges, chop the celery, and slice the red onion. In a large serving bowl add the lettuce and vegetables, along with the feta cheese, and Kalamata olives. Dress with a Greek Salad Dressing. 

  8. Once the vegetables are grilled to perfection, transfer them to a serving platter. Squeeze fresh lemon juice over the grilled broccolini and red onions if desired for an extra burst of flavor. Serve immediately as a delicious and nutritious side dish or appetizer.
