Artisan Sweet Gem Protein-Packed Green Goddess Salad

Ingredients
Green Goddess Dressing
- ½ cup fresh basil
- ¼ cup fresh mint
- ¼ cup fresh dill
- ½ cup fresh cilantro
- ½ cup fresh parsley
- ¼ cup olive oil
- 2 tablespoons tahini
- ¼–½ cup water (to thin, as needed)
- 1 cup cottage cheese (whipped)
- Juice of ½ lemon
½ teaspoon garlic powder
Salt and pepper, to taste
Salad
3 heads Artisan Sweet Gem lettuce, chopped
⅓ cup green onion, sliced
2–3 cocktail cucumbers, sliced
1½–2 cups rotisserie chicken, shredded
Roasted Chickpeas
1 (15-ounce) can chickpeas, drained and dried
1 tablespoon olive oil
½ teaspoon paprika
Salt and pepper, to taste
Directions
- Preheat oven to 425°F. Toss chickpeas with olive oil, paprika, salt, and pepper. Spread evenly on a baking sheet and roast for 20–25 minutes, shaking halfway through, until crispy and golden.
- In a blender or food processor, combine basil, mint, dill, cilantro, parsley, cottage cheese, tahini, olive oil, lemon juice, garlic powder, salt, and pepper. Blend until smooth. Slowly add water until the dressing reaches a creamy, pourable consistency.
- In a large bowl, combine chopped Artisan Sweet Gem lettuce, sliced cucumbers, and green onion. Toss lightly to distribute ingredients evenly.
- Top the salad with shredded rotisserie chicken and roasted chickpeas. Drizzle generously with Green Goddess dressing and serve immediately.
