- 2–3 heads Artisan Sweet Gem Lettuce, separated into whole leaves
- 1 large ball of burrata cheese (or 2 smaller)
- 2 soft-boiled eggs, halved
- 3–4 slices prosciutto, torn
- 1 cup heirloom cherry tomatoes, halved
- ½ cup thinly sliced cucumber
- ¼ cup toasted pistachios
- Fresh basil or mint leaves, for garnish
- Salt and freshly cracked black pepper
For the Lemon-Herb Vinaigrette
- ¼ cup extra virgin olive oil
- 1½ tbsp fresh lemon juice
- 1 tsp honey
- 1 tsp Dijon mustard
- 1 tbsp finely chopped herbs of choice
- Salt & pepper, to taste
Directions
- Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, Dijon, herbs, salt, and pepper until emulsified.
- Assemble the lettuce base: Arrange Artisan Sweet Gem leaves on a large platter or individual plates.
- Add toppings: Layer cherry tomatoes, cucumber ribbons, and prosciutto slices across the lettuce. Nestle the burrata and halved soft-boiled eggs among the greens.
- Dress and finish: Drizzle with the lemon-herb vinaigrette. Sprinkle toasted nuts, fresh herbs, salt, and pepper on top.
- Serve immediately.
