Artisan Sweet Broccoli & Walnut Au Gratin

Ingredients
  • 3 bunches Tanimura & Antle Artisan® Sweet Broccoli, ends trimmed, large stalks halved lengthwise
  • 2 Tbsp unsalted butter
  • ½ cup minced onion
  • 2 Tbsp all-purpose flour
  • 1 cup milk
  • ¾ cup vegetable broth
  • ½ tsp granulated garlic
  • 2 cups grated cheddar cheese
  • ½ cup walnut pieces
  • ¼ cup seasoned breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • Butter, for greasing casserole dish
Directions
  1. Preheat oven to 350°F.
  2. Blanch broccoli: In a large pot of salted simmering water, blanch broccoli for 2 minutes. Drain well and transfer to a large bowl. Discard blanching water.
  3. Make sauce: In a saucepan, melt butter over medium heat. Add onion and sauté for 3–4 minutes until softened.
  4. Stir in flour and cook for 2 minutes, stirring occasionally.
  5. Add milk, vegetable broth, granulated garlic, a pinch of salt, and ¼ tsp black pepper. Whisk and cook for 4–5 minutes until smooth and slightly thickened.
  6. Remove from heat. Stir in cheddar cheese until melted and sauce is creamy.
  7. Combine: Toss broccoli with cheese sauce and transfer to a buttered casserole dish.
  8. Topping: In a small bowl, mix walnut pieces and breadcrumbs. Sprinkle evenly over broccoli mixture.
  9. Bake: Place casserole in oven and bake for 25 minutes, until golden and bubbly.
  10. Serve immediately.
