Artisan Sweet Gem Brunch Salad

Ingredients

Ingredients: 

  • 2–3 heads Artisan Sweet Gem Lettuce, separated into whole leaves 
  • 1 large ball of burrata cheese (or 2 smaller) 
  • 2 soft-boiled eggs, halved  
  • 3–4 slices prosciutto, torn  
  • 1 cup heirloom cherry tomatoes, halved 
  • ½ cup thinly sliced cucumber  
  • ¼ cup toasted pistachios  
  • Fresh basil or mint leaves, for garnish 
  • Salt and freshly cracked black pepper 

 

For the Lemon-Herb Vinaigrette 

  • ¼ cup extra virgin olive oil 
  • 1½ tbsp fresh lemon juice 
  • 1 tsp honey 
  • 1 tsp Dijon mustard 
  • 1 tbsp finely chopped herbs of choice 
  • Salt & pepper, to taste 
Directions
  1. Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, Dijon, herbs, salt, and pepper until emulsified. 
  2. Assemble the lettuce base: Arrange Artisan Sweet Gem leaves on a large platter or individual plates. 
  3. Add toppings: Layer cherry tomatoes, cucumber ribbons, and prosciutto slices across the lettuce. Nestle the burrata and halved soft-boiled eggs among the greens. 
  4. Dress and finish: Drizzle with the lemon-herb vinaigrette. Sprinkle toasted nuts, fresh herbs, salt, and pepper on top. 
  5. Serve immediately.
