Artisan Sweet Broccoli Pasta Salad

Ingredients:

For the Salad

  • 2 cups Tanimura & Antle Artisan Sweet Broccoli, chopped and lightly blanched or steamed
  • 2 cups small pasta shapes (rotini, shells, or bowties), cooked and cooled
  • ½ cup diced red bell pepper
  • ½ cup halved cherry tomatoes (optional for older kids)
  • ½ cup mini mozzarella balls
  • ½ cup diced turkey
  • ¼ cup finely chopped carrots
  • ¼ cup peas
  • Salt and pepper, to taste

For the Dressing

  • ¼ cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

Instructions:

 

Step 1: Blanch the Broccoli

Bring a pot of water to a boil. Add the chopped Artisan Sweet Broccoli and cook for 1–2 minutes, just until bright green. Immediately transfer to an ice bath to stop the cooking. Drain well and set aside.

 

Step 2: Prepare the Pasta

Cook your chosen pasta shape according to package instructions. Rinse under cold water, drain thoroughly, and let cool completely.

 

Step 3: Make the Dressing

In a medium bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, honey, garlic powder, onion powder, and a pinch of salt and pepper until smooth and creamy. Adjust seasoning to taste.

 

Step 4: Assemble the Salad

In a large mixing bowl, combine the cooled pasta, blanched broccoli, diced turkey, red bell pepper, mozzarella balls, carrots, peas, and cherry tomatoes (if using).

 

Step 5: Dress & Chill

Pour the dressing over the salad and toss until everything is evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
