Instructions:
Step 1: Prepare the Artisan Dew Drop Cabbage
Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil. Quarter the Artisan® Dew Drop Cabbage into wedges, then brush each wedge with olive oil and season generously with salt and freshly ground black pepper.
Step 2: Roast the Cabbage
Arrange the cabbage wedges on the prepared baking sheet. Roast for 20 to 25 minutes, flipping halfway through, until tender with golden-brown, lightly crisp edges. Set aside while you prepare the soup.
Step 3: Brown the Italian Sausage
In a large pot over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into bite-sized pieces as it cooks. Drain any excess fat from the pot.
Step 4: Build the Soup
Add the diced onion and garlic to the sausage and cook until softened and fragrant. Stir in the tomato paste, paprika, smoked paprika, dried thyme, salt, and pepper until everything is well combined.
Step 5: Simmer & Add the Rice
Pour in the crushed tomatoes and broth and stir to combine. Bring the soup to a gentle simmer and cook for 15 to 20 minutes to allow the flavors to come together. Stir in the cooked rice, then taste and adjust the seasoning as needed.
Step 6: Assemble & Serve
Place a roasted Artisan Dew Drop Cabbage wedge in the center of each shallow bowl. Ladle the hot soup over and around the cabbage, leaving some of its beautifully caramelized edges visible. Finish with fresh parsley, Parmesan cheese, a drizzle of olive oil, and freshly cracked black pepper. Serve immediately for a hearty, comforting meal that lets the roasted cabbage shine.
