Boston lettuce should have fairly large, loose heads with thick leaves and even coloring. Leaves are fresh and flexible with soft, buttery feel. Green Boston lettuce has even-colored, light green leaves and red Boston lettuce has light red leaves.
Store Boston lettuce in the crisper or produce drawer of the refrigerator. Wash right before eating. Separate fruits from vegetables to minimize the detrimental effects of ethylene on the vegetables.
