Thai Lettuce Wraps

Ingredients:

  • 1 cup bean sprouts
  • 1 package cooked rice noodles
  • 1/2 cup shredded carrots
  • 3 Tbsp. chopped peanuts
  • 2 Tbsp. Tanimura & Antle radishes, shredded
  • 1/4 cup thinly sliced red pepper
  • 12 Tanimura & Antle snow peas
  • 12 large Tanimura & Antle Green Leaf leaves
  • soy sauce
  • fresh limes

Directions:

  • Cook rice noodles and cool in cold water - mix cooked noodles and first 4 ingredients, lightly sprinkle with fresh lime juice and soy sauce.
  • Place a spoonful of mixture on a single Tanimura & Antle Green Leaf, place a snow pea on top, add a few chopped peanuts and roll up in a tight little bundle.
