Thai Lettuce Wraps
Ingredients:
- 1 cup bean sprouts
- 1 package cooked rice noodles
- 1/2 cup shredded carrots
- 3 Tbsp. chopped peanuts
- 2 Tbsp. Tanimura & Antle radishes, shredded
- 1/4 cup thinly sliced red pepper
- 12 Tanimura & Antle snow peas
- 12 large Tanimura & Antle Green Leaf leaves
- soy sauce
- fresh limes
Directions:
- Cook rice noodles and cool in cold water - mix cooked noodles and first 4 ingredients, lightly sprinkle with fresh lime juice and soy sauce.
- Place a spoonful of mixture on a single Tanimura & Antle Green Leaf, place a snow pea on top, add a few chopped peanuts and roll up in a tight little bundle.
