Sweet Gemâ„¢ Seafood Cocktail Lettuce Cups

Ingredients:

  • 1/2 pound small whole shrimp, cooked
  • 1/2 pound imitation crabmeat
  • 1/4 cup cocktail sauce
  • 1 Tablespoon lemon juice
  • 1/4 teaspoon celery seed
  • 3 Tablespoons red onion, diced
  • 2 Tanimura & Antle Sweet Gem™ Lettuce Hearts, chopped
  • 20 Tanimura & Antle Sweet Gem™ Lettuce leaves, from 2 heads
  • Pepper to taste

Directions:

  • Mix shrimp together with imitation crabmeat, cocktail sauce, lemon juice, celery seed, red onion and chopped Tanimura & Antle Sweet Gem™ lettuce hearts.
  • Season with pepper to taste and chill for 1 hour.
  • Serve the seafood cocktail in Tanimura & Antle Sweet Gem™ lettuce leaves as an appetizer or luncheon salad.

Serves: 4
