NEW Spiced Living Lettuce Cups with Lime, Coconut and Peanuts
Serves: 8 5-6 oz. Portions (3 lettuce cups)
Ingredients:
- 2 heads Tanimura & Antle Living Lettuce
- 8 Limes, rind removed and chopped into 1/4 inch pieces
- 2 oz Shredded Sweetened Dried Coconut
- 4 oz Salted Peanuts, crushed
- 4 oz Sweet Chili Sauce (such as Mae Ploy or other brand)
Directions:
- Lettuce Preparation: Gently de-leaf lettuce from root ball. Place in colander and rinse with warm running water. Blot dry with paper towel. Separate lettuce leaves to be used for lettuce cups. You will need about 24 in about 3” diameter.
- Assembly: Place 3 pieces of lime in each lettuce cup. Top with tablespoon of crushed peanuts, a tablespoon of shredded coconut and drizzle with about 1 tsp of sweet chili sauce. Serve.
