Orecchiette with Broccoli
Ingredients:
- 1 lb. orecchiette or medium shell pasta
- 1 stalk Tanimura & Antle® Broccoli, rinsed, cut into 1” florets
- 1/4 cup olive oil
- 1 Tanimura & Antle® Red Bell Pepper, rinsed, chopped
- 2 cloves garlic, minced
- 1/2 tsp. crushed red pepper
- 1 cup grated Romano or Parmesan cheese
Directions:
- Cook pasta in boiling salted water 6 minutes.
- Add broccoli; continue cooking pasta and broccoli until just tender, 3 to 4 minutes longer.
- Drain, reserving 1/2 cup cooking water.
- Heat oil in large skillet over medium heat. Sauté bell pepper with bell pepper with garlic and crushed papper until just tender, 3 to 4 minutes. Remove from heat. Add pasta and broccoli; stire to combine. Moisten with some of the reserved cooking water, if necessary.
- Transfer to serving bowl. Add cheese; toss. Season with pepper.
Serves: 4-6
