Cold Iceberg Soup with Mint Cilantro Swirl
Ingredients:
- 4 cups packed Tanimura & Antle head iceberg lettuce torn, rinsed and spun dry
- 1-1/2 cups buttermilk
- 1/2 cup packed fresh mint leaves
- white pepper to taste
Directions:
- In a blender, combine lettuce, buttermilk, mint and pepper until mixture is smooth.
- Transfer to a bowl and chill covered for 1 to 3 hours.
The Swirl:
- 1/4 cup packed fresh mint leaves
- 1/4 cup packed fresh Tanimura & Antle cilantro leaves juice of 1 fresh lime
- 1/4 tsp salt or to taste
- 2 tsp water
Directions:
- Combine above ingredients in a blender and puree.
- Swirl 1 to 2 Tbsp into the soup just before serving.
- Garnish with lime zest, Tanimura & Antle cilantro or mint leaves.
