Cold Iceberg Soup with Mint Cilantro Swirl

Ingredients:

  • 4 cups packed Tanimura & Antle head iceberg lettuce torn, rinsed and spun dry
  • 1-1/2 cups buttermilk
  • 1/2 cup packed fresh mint leaves
  • white pepper to taste

Directions:

  • In a blender, combine lettuce, buttermilk, mint and pepper until mixture is smooth.
  • Transfer to a bowl and chill covered for 1 to 3 hours.

The Swirl:

  • 1/4 cup packed fresh mint leaves
  • 1/4 cup packed fresh Tanimura & Antle cilantro leaves juice of 1 fresh lime
  • 1/4 tsp salt or to taste
  • 2 tsp water

Directions:

  • Combine above ingredients in a blender and puree.
  • Swirl 1 to 2 Tbsp into the soup just before serving.
  • Garnish with lime zest, Tanimura & Antle cilantro or mint leaves.
