Description:
Tanimura & Antle fresh escarole, a member of the endive family and has broad, slightly curved, pale green leaves. Escarole has a milder taste than the endive.
Wrapped escarole, a Tanimura & Antle exclusive, is the premium pack of head leaf lettuce in the marketplace today. It is harvested using our proprietary field-wrap packing process to maintain peak freshness at the optimum point of harvest.
Selection Tips:
Select escarole that has a full base and compact heart.
Storage Tips:
Store escarole in the crisper or produce drawer of the refrigerator, up to one week. Wash right before eating. Store away from ethylene-producing fruits to avoid discoloration, spotting or decay. Wash right before eating.
Preparation Tips:
- Escarole can be eaten raw or cooked.
- Sauté with olive oil and garlic and sprinkle with grated Parmesan cheese; serve with grilled fish or Italian sausages; Make a classic Italian escarole soup with chicken broth, meatballs and pasta.
- The slightly bitter greens work well in a fruit and toasted nut salad.

Additional Storage Information:
Ideal Storage Temperature: 34° -36° F/90-95% relative humidity. Store in area with good circulation and away from ethylene-producing fruits to avoid russeting spotting or decay.
Merchandising Tips:
- Cross-merchandise Tanimura & Antle escarole with coleslaw mix and coleslaw dressing.
- The slightly bitter greens work well in a fruit and toasted nut salad. Cross-merchandise with seasonal fruits (apples, pears, oranges), red onion, pecans and goat cheese. Escarole adds elegance to brunch in quiche, frittatas or egg bakes.
- Cross-merchandise with eggs and cheese.
Safe Produce Handling Suggestions:
- Refrigerate produce as soon as possible after purchasing. Refrigerate cut or chopped produce within two hours of peeling or cutting. Once cut, leftover produce should be discarded if left at room temperature for more than two hours.
- Wash hands with hot soapy water before and after handling fresh produce, as well as after using the bathroom, changing diapers, or handling pets.
- Wash all vegetables with cool tap water immediately before eating. Don't use soap or detergents. Cut away any bruised or damaged areas before eating.
