Description:
Endive, also known as chicory, grows in loose heads of lacy, green-rimmed outer leaves that curl at the tips and have a prickly texture. The off-white center leaves form a compact heart.
Wrapped endive, a Tanimura & Antle exclusive, is the premium pack of head leaf lettuce in the marketplace today. It is harvested using our proprietary field-wrap packing process to maintain peak freshness at the optimum point of harvest.
Selection Tips:
Select endive that looks firmly packed together with pale, yellow-green tips.
Storage Tips:
Store endive in the crisper or produce drawer of the refrigerator, up to one week. Store shrink-wrap endive it its bag. Wash right before eating. Store away from ethylene-producing fruits to avoid discoloration, spotting or decay. Wash right before eating.
Preparation Tips:
- Endive can be eaten raw or cooked.
- Chop and add Tanimura & Antle endive to coleslaw for bright color and a slightly bitter flavor.
- The slightly bitter greens work well in a fruit and toasted nut salad.
- Chop and add to quiche, frittatas or egg bakes.
- Braise with white wine and garlic; garnish with shaved or grated Parmesan cheese.

Additional Storage Information:
Ideal Storage Temperature: 34° -36° F/90-95% relative humidity. Store in area with good circulation and away from ethylene-producing fruits to avoid russeting spotting or decay.

- Endive is a colorful and flavorful addition to coleslaw. Cross-merchandise Tanimura & Antle endive with coleslaw mix and coleslaw dressing.
- The slightly bitter greens work well in a fruit and toasted nut salad. Cross-merchandise with seasonal fruits (apples, pears, oranges), red onion, pecans and goat cheese.
- Endive will add elegance to brunch used in quiche, frittatas or egg bakes. Cross-merchandise with eggs and cheese.
Safe Produce Handling Suggestions:
- Refrigerate produce as soon as possible after purchasing. Refrigerate cut or chopped produce within two hours of peeling or cutting. Once cut, leftover produce should be discarded if left at room temperature for more than two hours.
- Wash hands with hot soapy water before and after handling fresh produce, as well as after using the bathroom, changing diapers, or handling pets.
- Wash all vegetables with cool tap water immediately before eating. Don't use soap or detergents. Cut away any bruised or damaged areas before eating.
