Taste of the Islands

Try this nutritious summer salad packed full of flavor and color and escape to the Islands any day! 

Ingredients:
1 4-count clamshell Tanimura & Antle Artisan® Lettuce (use 10 cups torn or chopped) * 
2 Tanimura & Antle Artisan® Sweet Italian Red Onion, thinly sliced
1 cup precooked or grilled shrimp
1 sliced cucumber
1/3 cup chopped macadamia nuts
1/2 cup fresh or canned mango or pineapple, cubed
*or leaf lettuce of choice
 
Lime and Pineapple Curry Vinaigrette
(see our recipe here)
Directions:
  1. Rinse lettuce with warm water, drain and pat dry.  For extra crunch, crisp washed lettuce in the fridge for 30 minutes before preparing.
  2. Arrange 2-1/2 cups of lettuce on each plate. Top lettuce evenly with shrimp, cucumber, macadamia nuts, mango and pineapple. Drizzle each serving with salad dressing.
