Taste of the Islands
Try this nutritious summer salad packed full of flavor and color and escape to the Islands any day!
1 4-count clamshell Tanimura & Antle Artisan® Lettuce (use 10 cups torn or chopped) *
2 Tanimura & Antle Artisan® Sweet Italian Red Onion, thinly sliced
1 cup precooked or grilled shrimp
1 sliced cucumber
1/3 cup chopped macadamia nuts
1/2 cup fresh or canned mango or pineapple, cubed
*or leaf lettuce of choice
Lime and Pineapple Curry Vinaigrette
Rinse lettuce with warm water, drain and pat dry. For extra crunch, crisp washed lettuce in the fridge for 30 minutes before preparing.
Arrange 2-1/2 cups of lettuce on each plate. Top lettuce evenly with shrimp, cucumber, macadamia nuts, mango and pineapple. Drizzle each serving with salad dressing.
