Artisan Romaine Thai Chicken Wraps

What you’ll need:

• One 3 ct. Bag of Tanimura & Antle Artisan Romaine
• 1/4 Cup Tanimura & Antle Cilantro
• 1/4 Cup Slatted Peanuts
• 1/2 Cup Julienne Green Cabbage
• 1/2 Cup Chopped Pineapple
• Pinch of salt
• Pinch of pepper
• Two Boneless Skinless Chicken Breast

 

Chicken Marinade:

• 2 TBSP Extra Virgin Olive Oil
• 1 Pinch Salt
• 1 Pinch Pepper

Dressing:

• 1/4 Cup Teriyaki Glaze
• 1/4 Cup Chili Sauce

Instructions:

1. Separate Artisan Romaine leaves and rinse with water – towel dry and
set aside.

2. For an extra crispy crunch, chill washed Artisan Romaine leaves in the
refrigerator for 30 minutes before prepping.

3. Marinate chicken breasts for 20 minutes.

4. On medium heat, BBQ chicken to 165 degrees.  Depending on BBQ,
usually 5 minutes on each side.

5. Set aside to cool.

6. Combine chopped cilantro, chopped pineapple, peanuts, julienne green
cabbage, salt, and pepper in large bowl.

7. Add dressing and stir.

8. Spoon desired amount of filling into Artisan Romaine lettuce cups.

9. Enjoy!
